Zenitsu has a very keen sense of hearing where if he focuses he can even tell if you're lying based off of the sounds your body makes (as well as any basic emotion), as well as picking up on conversations that go on while he's asleep.
Canonly, he's also able to distinguish the difference between who is human and who isn't (aka demon); he quickly figures out that Nezuko, who's in the wooden container Tanjiro carries on his back, is a demon without seeing her.
Zenitsu can also pick up on how your character's general personality as well, as he does with Tanjiro when they first meet—Zenitsu narrates in his monologue that he's never heard of a sound so kind before, that it almost makes him cry. Now, whether Zenitsu can pick up personality traits just from sound generally won't change whether he will trust said person or not, as he ignores his own instincts a lot.
I understand this can get a little iffy when it comes to RP. I will generally be using this ability as a means to sense any immediate danger or otherwise indicated by the other player that it is ok for me to have Zenitsu pick up more from their characters. Please let me know if Zenitsu can pick up sounds from your character by opting in (or out)!

Extent of what Zenitsu can pick up: Pretty much whatever you want tbh. He doesn't have like, hidden motives per se, but will absolutely downplay his own feelings in particular instances to the point where it probably sounds like he's lying sometimes. General character and current emotions are completely open for pinpointing if you wanna!

Character Name: Tamaki Yotsuba
Extent of what Zenitsu can pick up: Same as above! Tamaki is, unlike Shinji, basically a totally honest guy, though he often does a bad job of explaining himself clearly. It might lead to what seem like discrepancies between what he says and what he means, which will probably be. Fun for your zapkid.
Notes for anything I should have Zenitsu pick up on: He's an idol! He's got good pitch! If you can pick up on that underneath his typically lazy-sounding tone!

Notes for anything I should have Zenitsu pick up on: Vianca is the softest spoken, as you know. Speaks gently, doesn't tend to put a lot of emphasis on her words in the same way she does not emote usually. (Read: its monotone, bro.) She's getting a little better about that though. She is also working on becoming comfortable with raising her volume.
Anything else: Every once in a rare while, he might hear a little buzz from her back when her wings re-adjust under her shirt. Mysterious.

Extent of what Zenitsu can pick up: All The Things
Notes for anything I should have Zenitsu pick up on: He's a very Honest boy, usually, even if sometimes he will say things he simultaneously believes but also knows are full of shit. ("Oh yeah I made a ton of friends in prison" etc. etc.) Generally he doesn't have anything to hide and usually lies via omission if he has something he needs to keep on the down-low. His tone is usually pretty even and low, but Zenitsu will definitely know if he's pissed, even if he doesn't raise his voice that much. On the flipside, his tone does get a tiny bit softer with people he's fond of.
Anything else:

Extent of what Zenitsu can pick up: Nita's an honest, self-sacrificing sort of person, she has VERY mixed feelings about Hugtopia, and she doesn't really have hidden intents unless finding a better way to help the natives feel again counts??
Notes for anything I should have Zenitsu pick up on: Nothing special I can think of here! Though if you want to have the Speech *sparkle* when Nita talks in it, that would be hilarious.

What Zenitsu would pick up instead will be that Nita is an honest, kind girl who has some kind of special powers, and if you're comfortable, picking up any current emotions she may have depending on what is going on in the thread.
Like for example, if Nita is upset at something, even if she's not showing it on the outside or speaking about it, Zenitsu would be able to pick up that she is upset at something because she's still feeling that emotion on the inside. He won't know what she's upset about, though.

So he can't sense wizardry being a person (it's not like Nita's talking with someone who's outside the city; the peridexis just came in with her)? Not sure if I'm getting that right. |D (Tanjiro might be where I got that mixup from, maybe???) It might be similar to the whole thing with 'sine functions' Pyra's mun mentions below, maybe? A harmonic that shifts depending on what Nita's doing, particularly if that Thing is also a spell.

Pyra's sine functions would be something Zenitsu can barely pick up but wouldn't know how to explain it too, so if you do want Zenitsu to pick up on the peridexis, I can certainly have him pick it up and rudely call it a ghost or think Nita's haunted LMAO

Zenitsu's hearing is only limited to anything with a physical form, unlike Tanjiro's keen nose, to a certain extent. While Pyra's sine functions might be similar in nature, because that's part of herself as a physical form Zenitsu would be able to pick it up. Since peridexis/wizardry is a separate entity, unless it gets a physical form Zenitsu wouldn't know it's there.

Notes for anything I should have Zenitsu pick up on: she's not human. idk if he can hear divine energy (i honestly have no idea what it would sound like, maybe like the simplest of sine functions? but probably something purely neutral), but that would be her! maybe he can "hear" that there is some kinda restraint in place.

Notes for anything I should have Zenitsu pick up on: Somnus speaks in an even, severe tone. Rather than hidden intents, he curates his words based on what he deems necessary, so a lot goes unsaid. His primary emotions are remorse and hope.
Anything else: Nope.

Extent of what Zenitsu can pick up: Everything's free game! Kyoko doesn't generally have hidden intents, but sometimes she just doesn't (bother to) explain herself very well.
Notes for anything I should have Zenitsu pick up on: She's very resilient, but also really soft. A little volatile! Kyoko sorta gently pitches her voice up for polite speech; she also just has a lot of range, and can be really loud when she gets carried away.
Anything else: idk if this would even come up or apply to Zenitsu's ability, but she might sound extra scary and intense when she gets real mad?

Extent of what Zenitsu can pick up: Since you know her canon, I'm all right with everything! She's not exactly super secretive anyway. And even if Zenitsu senses something she'd rather not admit, she's always pedantic enough to explain herself out of it lmao.

richnesseliteness underlying her tone, speech, movements, etc. I'd say it'd sound like a violin or a fancy instrument but not sure if they have that already in Taisho lol so anything close is okay with me! Extent of what Zenitsu can pick up: He wears his emotions on his sleeve - and most of them are angry. So really anything goes.
Notes for anything I should have Zenitsu pick up on: He's pretty much always tense and ready to fight. He's used to people not trusting him (though he is trustworthy) so he's wary.
Anything else: He's got a wide range of powers. I'm not sure if that's something that would apply?

I peeked at Nico's profile! Canonly, Zenitsu can also distinguish humans and demons very easily because their sounds are different (which I completely forgot to add in the main entry, whoops...Sorry!) Nico's a demigod, to Zenitsu may be mix of general human sound and something else. Would he be able to pick that up?

Extent of what Zenitsu can pick up: Anything! Go for it. Coil is mute, sneaky, and super repressed on the emotions/emoting front, so I'm always down for anything that helps communication with him or gets past his stupid walls.
Notes for anything I should have Zenitsu pick up on: Coil is human, but is a necromancer and also has a small piece of a necromantic "demigod" inside of him, if that's something that might be picked up. He also has some very big emotions under the shuttered appearance he puts on, so have fun with that. Also, feel free to understand more of what Coil wants to say than most people do, because he tends to vent a lot of that through subtle things like the way he breathes and shifts his weight.
Anything else: Coil's permissions/abilities post and his app if it helps!

Extent of what Zenitsu can pick up: Oocly go nuts, with the caveat that Ogata will find this ability Very intrusive and will be Unhappy about it if he finds out. He's just a regular dude who seems outwardly very unemotional but that's just because he's Very Repressed
Notes for anything I should have Zenitsu pick up on: Ogata is one of those types who smiles when he's mad. This much should be more obvious to Zenitsu than most! Even more importantly, though, is that this cat is actually Very Terribly Lonely and Sad in a low key but enduring way. Sort of like a Low Thrum, the sort of sound you get used to even though it is actually pretty distractingly loud!! If that makes sense.
Anything else: Ogata likes to do this thing where he smoothes back his hair when he's being smug but also anxious/stressed, like it's some sort of self-soothing mechanism.

Extent of what Zenitsu can pick up: Pick up as much as you want! Sasuke needs to be called out on himself more often
Notes for anything I should have Zenitsu pick up on: Sasuke has a lot of pain in his history, deep and traumatizing. Lots of people died, and he was betrayed by people he trusted. He tries to hide it under a mask. Despite all that, there is a struggling kindness, loneliness, someone needing help.
Anything else: Sasuke has a theme idk if that is at all relevant

Extent of what Zenitsu can pick up: From what I can tell, this ability seems to effect only himself. So, unless Touma is touching him directly with Imagine Breaker, he's free to pick up on all of Touma's emotions and bullshit!
Notes for anything I should have Zenitsu pick up on: Although Touma himself is human and a quite kind one at that (although he's not always nice), he does have several roommates living inside him. Here's a nice picture of them. Aww, aren't they cute? Anyway, I'm not sure he can hear weird dragon things, but they're there.

Notes for anything I should have Zenitsu pick up on: It's not difficult to read Yuuji because he's... like this. But there are times when he smiles and glaze over things when he's about to do something dangerous so that's something that can probably be picked up??? Gestures to icon. Also, without Sukuna in him, I guess Yuuji's not giving off anything in particular but if you'd like Zenitsu to sense something... off about him, go ahead!
Anything else: SORRY he's probably loud internally AND externally. You gotta live with it now Zenitsu.
